Most actually are scams of some sort. 

One common approach for example, often the guy that makes it keeps most of the coins for themselves.  The coin reaches X value based on those in the market, then it is flooded with the creators coins.  The whole thing is more or less trashed as the creator cashes out.

Another issue I have seen is that some don't actually ever stop inflating.  Some inflate faster in the future. 

Bitcoin is the place to be, for better or worse.
